Raw Beet and Carrot Salad
1 large carrot, grated
1 large red beet, grated
1/4 tsp. red pepper flake
1 tsp. ginger, grated
1 garlic clove, minced fine
1 naval orange, segmented
juice from naval orange
1 tsp. orange zest
Pinch of sea salt
Pinch of black pepper
2 tbls. sunflower seeds, raw (divided)
1 tbls. sesame seeds, raw (divided)
sesame oil, untoasted
1. Peel , grate carrot and beets add grated ginger, red pepper flake, garlic clove, orange zest, sea salt, black pepper, and orange juice. Mix well. Top salad with orange segments, sesame seeds, sunflower seeds and drizzle of sesame oil if using.
Enjoy.
Prep time: 5 minutes
Serving size: 1 large or 2 med
*I use rubber gloves whenever I do anything with beets. Also I have a glass cutting board and ceramic knives which I LOVE. If you can get one they are truly amazing. They are great for us veg heads as they do not stain or turn cut veggies brown. Just be careful they are very sharp, when I first got mine I almost cut the tip of my thumb off : /
